A crisp, tangy coleslaw made with white and red cabbage, Granny Smith apple, and fresh herbs, dressed in a creamy mustard and cider vinegar dressing.
Most shop-bought coleslaw is fine, but it doesn't really compare to one you've made yourself. This version uses both white and red cabbage for colour and crunch, shredded carrot, a sharp Granny Smith apple for a bit of sweetness, and a good handful of fresh chives and flat-leaf parsley. The dressing is a simple mix of mayonnaise, sour cream, Dijon mustard, and apple cider vinegar. It's creamy without being heavy, and the vinegar keeps it from feeling claggy.
Salting the cabbage and leaving it to sit for 30 minutes draws out the excess moisture, which means the dressing stays thick and the slaw stays crisp rather than turning watery.
The drying step after rinsing is worth taking seriously. Whether you use a clean tea towel or a salad spinner, getting the cabbage properly dry before adding the dressing makes a real difference. Wet cabbage dilutes the dressing and you end up with a pool of liquid at the bottom of the bowl. Take a couple of minutes to do it properly and the slaw will hold up much better, especially if you're making it ahead of time.
This coleslaw works alongside pretty much anything - grilled chicken, pulled pork, fish and chips, or just stuffed into a bread roll. It's good for barbecues and gatherings because you can make it a few hours ahead and it will keep well in the fridge. The apple adds a freshness that lifts the whole thing, and the smoked paprika gives the dressing a very subtle warmth. It serves six as a side dish, though it's easy enough to double the batch if you need more.
Store in an airtight container in the fridge for up to 2 days. Give it a good stir before serving, as some liquid may settle at the bottom. The apple may discolour slightly over time, but the flavour will not be affected.
Serve alongside grilled chicken, pulled pork, burgers, or fish and chips. It also works well stuffed into a crusty roll with some leftover roast meat. For best results, make it an hour or two ahead and let it chill in the fridge so the flavours settle.
