Savoury Pork and Udon Noodles

A rich and flavourful udon noodle dish with tender pork mince, tahini, and chilli bean sauce, finished with pak choy, fresh coriander, and roasted peanuts.

By Ricky Robinson Updated October 8, 2024

This udon noodle dish brings together tender pork mince with a rich, savoury sauce that's both comforting and satisfying. The key is in the marination of the pork, which allows it to absorb the dark soy sauce, garlic, and ginger, creating a depth of flavour that comes through in every bite.

Once the pork is cooked, it's combined with a creamy tahini and chilli bean sauce that adds a lovely richness to the dish. The addition of chicken stock gives the sauce a nice base, whilst the udon noodles provide a hearty, chewy element that soaks up all that flavour beautifully.

The marinated pork absorbs the soy, garlic, and ginger, creating a depth of flavour that makes this dish truly special.

As the dish comes together, you'll toss in fresh spring onions and shredded pak choy, adding a nice crunch and a pop of colour. It's a bit of a balancing act, getting the pork browned properly and ensuring the noodles are cooked just right, all whilst allowing the flavours to meld together in the pan.

The garnishes are what really bring this dish to life. A sprinkle of Sichuan sauce adds a touch of heat and complexity, whilst the chopped red chilli gives you a bit of a kick. Fresh coriander brings a bright, herbal note, and the roasted peanuts add a lovely crunch and a subtle nutty flavour that complements the richness of the sauce.

This is the kind of meal that comes together relatively quickly once you've done your prep, making it ideal for a weeknight dinner when you want something a bit more special than the usual. The combination of textures and flavours works well together, from the tender pork and soft noodles to the crisp vegetables and crunchy peanuts.

Serve it up hot, and you've got a lovely dish that's sure to please. Whether you're new to cooking Asian-inspired dishes or you've been making them for years, these savoury pork and udon noodles are definitely worth a try.

Equipment Needed

  • Large Frying Pan or Wok
  • Mixing Bowl

Instructions

  1. 1
In a bowl, combine the minced pork, dark soy sauce, 2 tablespoons of sesame oil, crushed garlic, grated ginger, and chilli bean sauce. Mix well to ensure the pork is evenly coated. Cover the bowl and let it marinate for 30 minutes at room temperature.
  2. 2
After the marinating time, heat a large frying pan or wok over medium heat. Add the marinated pork mixture and cook for about 5-7 minutes, breaking it apart with a spoon, until browned and cooked through.
  3. 3
Stir in the tahini and soy sauce, mixing well to combine. Pour in the chicken stock and bring the mixture to a simmer. Allow it to cook for about 5 minutes, stirring occasionally.
  4. 4
While the sauce is simmering, cook the udon noodles according to the package instructions. Once cooked, drain and set aside.
  5. 5
Add the cooked udon noodles to the sauce in the frying pan, tossing to coat the noodles evenly in the sauce. Stir in the sliced spring onions and shredded pak choy, cooking for an additional 2-3 minutes until the pak choy has wilted.
  6. 6
Divide the udon noodles into bowls. Garnish with Sichuan sauce, chopped red chilli, fresh coriander, and roasted peanuts.
  7. 7
Serve hot and enjoy this flavourful dish!

Serving Suggestions

Serve hot in bowls with extra Sichuan sauce on the side. Pairs beautifully with a simple cucumber salad or steamed greens.

Variations

Try using chicken or turkey mince instead of pork, or swap the pak choy for shredded cabbage or baby spinach. For a vegetarian version, use crumbled firm tofu in place of the pork.
