Decadent festive rocky roads made with layers of milk and dark chocolate, crushed biscuits, marshmallows, and your favourite Christmas chocolates like Quality Street or Roses.
December brings quality time in the kitchen, and there is something special about baking when the days are shorter. The cosy atmosphere makes it the perfect time for making treats to share with family and friends.
These Christmas Chocolate Rocky Roads are easy to make and fun to customise. They are not your ordinary rocky roads, but a festive version that incorporates your favourite Christmas chocolates like Roses or Quality Street. You can choose from a variety of chocolates such as milk, dark, white, or even flavoured ones, mixing them with marshmallows and crushed biscuits to create your own unique combination.
The base is a smooth mixture of melted chocolate, butter, and golden syrup, which binds everything together beautifully. Crushed digestive biscuits add texture and crunch, whilst mini marshmallows provide little pockets of softness throughout. The addition of Christmas chocolates gives each bite a different flavour, making them fun to eat and genuinely festive.
The recipe requires minimal effort but delivers impressive results. You simply melt the chocolate mixture on the hob, stir in the crushed biscuits and marshmallows, then press it into a tray and let it set in the fridge. There is no baking involved, which means you can have these ready without heating up the oven.
The mixture sets firm in the fridge but softens slightly at room temperature, giving you the perfect texture for slicing.
Once set, these rocky roads can be cut into bars or squares and arranged on a cake stand. A dusting of icing sugar or edible glitter adds a festive touch. They make excellent homemade gifts when wrapped in cellophane, and they are perfect for sharing over a cup of tea during the Christmas season.
Storage
Store in an airtight container in a cool place for up to 5 days. They can also be kept in the fridge to maintain firmness, but allow to sit at room temperature for 10 minutes before serving.
Variations
Try using different types of chocolate chips such as white chocolate or caramel. You can also swap Christmas chocolates for dried fruit and nuts, or add a handful of chopped fudge pieces for extra indulgence.
