Traditional Soda Farls

These cookies are easy to make and work well when you need something festive but don't want to spend hours in the kitchen. The combination of golden caster and light brown sugar gives them a good depth of flavour, whilst the rolled oats add texture and a bit of substance.
The white chocolate chips melt slightly as the cookies bake, creating pockets of creamy sweetness throughout.
The mixed dried fruit and chopped walnuts bring different textures to each bite. The fruit adds little bursts of sweetness, and the walnuts give a slight crunch that balances the soft, buttery base. You don't need any fancy equipment or technique here. It's a straightforward recipe that yields proper, satisfying cookies with a lovely mix of flavours. The vanilla extract ties everything together and gives them that classic biscuit aroma that fills the kitchen whilst they bake.
These cookies bake at 180°C for about 15 minutes. They'll still look a bit soft when you take them out, but that's what you want. They firm up as they cool, developing that nice chewy texture in the centre whilst staying slightly crisp at the edges. If you overbake them, they can turn out dry, so it's worth keeping an eye on the oven.
The dough comes together quickly. You whisk the butter and sugars until they're creamy, then add the egg and vanilla. The dry ingredients get folded in along with all the good bits: the oats, fruit, nuts, and chocolate. Rolling the dough into balls and pressing them down with a fork is simple enough, and it gives them that classic homemade cookie look. They're brilliant for sharing with family and friends during the festive season, or you could pack them up as edible gifts. And yes, they make excellent offerings for Santa on Christmas Eve.
Preheat the oven to 180°C and line a baking tray with parchment paper.
In a bowl mix together the flour, baking powder, salt, and oats. Then fold in the dried fruit, walnuts, and chocolate chips.
In a separate bowl, whisk together the butter and sugar until creamy, then beat in the egg and vanilla extract. Mix the dry ingredients with the wet ingredients together.
Roll a tablespoon at a time of the dough into balls in your hands then place on the baking sheet, then squash down with a fork.
Bake in the oven for 15 minutes, they will still be soft but lightly golden. Leave to cool for 5 minutes then remove to a wire rack to cool fully.
Storage
Store in an airtight container at room temperature for up to 5 days. They stay soft and chewy if kept properly sealed.
Variations
Try dark chocolate chips instead of white chocolate, or add a handful of desiccated coconut for a tropical twist. You can also swap the walnuts for pecans or almonds.
